Hyderabadi Masala has a broader, richer flavour profile designed for biryanis, kormas, curries and gravies. Nairuti’s blend also contains desiccated coconut and pomegranate seeds, alongside aromatic spices such as black and green cardamom, wild mace and star anise. Garam masala is usually a more general finishing or cooking spice blend, while biryani masalas are commonly more narrowly positioned around rice preparations.
It is rich, aromatic and moderately spicy rather than simply hot. Red chilli and black pepper provide warmth, while cardamom, mace, star anise, cinnamon and cloves build aroma and depth. Start with a smaller quantity if you prefer milder food and adjust while cooking.

You can add it directly while cooking, but briefly blooming the masala in ghee or oil can intensify its aroma. Keep the heat moderate and cook only until fragrant so the spices do not scorch. Gentle toasting or blooming is a common way to bring out the aromatic character of spice blends.
