It has a bold, robust and warming spice profile, but the final heat depends on how much masala you use and what else goes into the dish. Start with a smaller quantity if you prefer milder food, then increase gradually. Malvani cooking is traditionally known for pronounced chilli and spice character.
Malvani Masala has a distinctly coastal Maharashtrian flavour profile. Beyond everyday spices such as chilli, coriander and cumin, traditional Malvani blends commonly feature coconut and deeper aromatics such as star anise, cloves, cinnamon and other regional spices. That gives Malvani dishes a more layered, coastal character than a general-purpose curry masala.
No. Although Malvani cuisine is famous for seafood and meat curries, the masala works very well in vegetarian cooking too. It can be used in vegetable curries, usal, sprouts, brinjal preparations, dry sabzis and rice dishes.
Not necessarily. Nairuti Malvani Masala itself contains desiccated coconut, but you can still add fresh coconut, coconut paste or coconut milk when the particular recipe calls for a richer coastal gravy. Coconut is a defining element in many Malvani preparations, especially traditional curries.
Nairuti Malvani Masala contains no added preservatives and no anti-caking agents. It is also made without artificial colours or artificial flavours.
Because natural spice powders, including coconut-containing blends, can absorb moisture from the air, slight lumping may sometimes occur after opening, especially in humid weather. Keep the pack tightly closed, store it in a cool, dry place and always use a clean, dry spoon. Slight lumping alone does not mean the masala has spoiled.
