Nairuti Vyutpadan Malvani Masala

40 g (10 g per person)

Grated coconut (fresh/dry)

4 tbsp

Onion (finely chopped)

2 medium

Tomato (chopped or puree)

2 medium

Ginger garlic paste

1 tbsp

Oil

3 tbsp

Veggies / paneer / chicken / fish

300-350 g

Water

As needed

Fresh coriander & lemon wedges

For garnish


👩🍳 Step by Step Process

1️ Roast Coconut:
In a pan, dry roast 4 tbsp coconut till light golden. Keep aside.


2️ Prepare Base:
Heat 3 tbsp oil. Add onions, sauté till golden.
Add 1 tbsp ginger garlic paste, cook till raw smell goes.


3️ Spice Up:
Add 40 g Malvani Masala. Fry on low flame for 1 min to release aroma.


4️ Add Tomatoes:
Add chopped tomatoes or puree. Cook till oil separates.


5️ Combine:
Add roasted coconut & mix well. Add veggies, paneer, chicken or fish.


6️ Cook:
Add ½ to 1 cup water (as needed for gravy). Cover & cook on low till done (10-12 min).


7️ Finish:
Garnish with fresh coriander. Serve hot with lemon wedges.

Enjoy with steamed rice, bhakri, roti or jeera rice for a complete coastal meal.
