Ingredients:

Mixed vegetables or paneer: 400 g

Onions (finely chopped): 2 medium

Tomato puree: 1 cup

Ginger-garlic paste: 1 tbsp
-
Shahi all purpose masala: 1½ tbsp

Fresh cream: 2 tbsp
-
Cashew paste (optional): 1 tbsp
-
Green chillies: 1–2, slit
-
Cumin seeds: ½ tsp
-
Salt: To taste
-
Oil or ghee: 2 tbsp
-
Water: As needed
-
Fresh coriander: For garnish
Step-by-Step Method:

Temper the spices:
Heat oil or ghee in a pan. Add cumin seeds and let them splutter. -
Sauté the base:
Add finely chopped onions and cook until golden. Add ginger-garlic paste and sauté for a minute. -
Cook the tomato base:
Add tomato puree and cook until the oil begins to separate. If using, stir in the cashew paste for added richness. -
Add spices:
Mix in the Shahi All Purpose Masala, green chillies, and salt. Sauté for 2–3 minutes to blend the flavors. -
Add the main ingredient:
Add the vegetables or paneer. Stir well to coat with the masala. Add a little water and simmer for 8–10 minutes. -
Finish with cream:
Stir in fresh cream and chopped coriander. Simmer for another 2 minutes. -
Serve hot:
Enjoy with chapati, paratha, jeera rice, or plain pulao.
