Ingredients
Small brinjals (baingan): 8–10, slit crosswise
Onions (finely chopped): 2 medium
Tomatoes (chopped): 2 medium
Ginger-garlic paste: 1 tbsp
Rajwadi masala: 2 tbsp
Red chilli powder: ½ tsp
Turmeric powder: ½ tsp
Salt: To taste
Oil: 3 tbsp
Water: As needed
Coriander leaves: For garnish
Step-by-Step Method
1. Mix chopped onions, tomatoes, ginger-garlic paste, rajwadi masala, red chilli powder, turmeric, and salt in a bowl.
2. Slit the brinjals crosswise (keeping stem intact) and stuff with the masala mixture.
3. Heat oil in a heavy-bottomed pan. Place stuffed brinjals in the pan carefully.
4. Cover and cook on low flame for 10–15 minutes, turning occasionally for even cooking.
5. Sprinkle some water if needed to avoid burning and help cook through.
6. Once brinjals are tender and masala is well-cooked, garnish with chopped coriander and serve hot.
