A comforting and flavorful everyday curry made with a mix of fresh vegetables, Indian spices, and a finishing touch of garam masala. Perfect for a quick weekday meal, this sabji pairs beautifully with phulkas, rotis, or steamed rice.
Ingredients:

Mixed vegetables (potato, carrot, beans, peas): 2 cups, chopped

Onions (chopped): 2 medium

Tomatoes (chopped): 2 medium

Ginger-garlic paste: 1 tbsp

Garam masala: 1 tsp

Turmeric powder: ½ tsp

Red chilli powder: 1 tsp

Cumin seeds: ½ tsp

Salt: To taste

Oil: 2 tbsp

Step-by-Step Method:

Temper the spices:
Heat 2 tbsp oil in a pan. Add ½ tsp cumin seeds and let them splutter. -
Sauté the onions:
Add chopped onions and sauté until golden brown. Add 1 tbsp ginger-garlic paste and cook for 1 minute until the raw smell disappears. -
Cook the tomatoes:
Add chopped tomatoes and cook until soft and pulpy. -
Add spices:
Stir in ½ tsp turmeric powder, 1 tsp red chilli powder, and salt to taste. Mix well. -
Add vegetables:
Add the chopped mixed vegetables and a splash of water. Cover and cook on medium heat for 10–12 minutes or until the vegetables are tender. -
Finish with garam masala:
Once the vegetables are cooked, sprinkle 1 tsp garam masala. Mix gently and simmer for 2–3 minutes to allow flavors to meld. -
Garnish & serve:
Turn off the heat. Garnish with freshly chopped coriander and serve hot.
