North Indian Mixed Sabji with Kitchen King Masala - Serves 4

A vibrant North Indian-style mixed vegetable curry infused with the bold flavors of Kitchen King Masala. This hearty sabji combines seasonal vegetables, paneer (optional), and a rich onion-tomato base, perfectly spiced and garnished with fresh coriander. A versatile dish that pairs beautifully with phulkas, jeera rice, or parathas for a wholesome meal.

Ingredients
Mixed vegetables (carrot, beans, peas, cauliflower, capsicum): 2 cups, chopped
Paneer cubes (optional): 100 g
Onions (finely chopped): 2 medium
Tomatoes (pureed): 2 medium
Ginger-garlic paste: 1 tbsp
Green chilli: 1, slit
Kitchen king masala: 1½ tbsp
Turmeric powder: ½ tsp
Red chilli powder: 1 tsp
Salt: To taste
Oil or ghee: 2½ tbsp
Water: As needed
Fresh coriander: For garnish
Fresh cream (optional): 1 tbsp


Step-by-Step Method
1. Boil or steam the mixed vegetables until just tender. Set aside.
2. Heat oil or ghee in a pan. Sauté chopped onions until golden brown.
3. Add ginger-garlic paste and green chilli. Cook for a minute.
4. Add tomato puree and cook until oil separates.
5. Add turmeric, red chilli powder, kitchen king masala, and salt. Mix well and cook the masala for 2–3 minutes.
6. Add boiled vegetables (and paneer, if using). Mix gently and add a splash of water.
7. Simmer covered for 6–8 minutes. Stir in cream (if using) and garnish with coriander.
