Nairuti Vyutpadan Hyderabadi Masala

50 g (12-13 g per person)

Oil or Ghee

3 tbsp

Chopped onions

2 medium

Tomato puree

2 medium tomatoes

Ginger garlic paste

1 tbsp

Curd (whisked)

100 ml

Veggies / chicken / paneer

300-350 g

Fresh coriander & mint

As needed for garnish

Water

As required

Lemon wedges

Optional for serving


👩🍳 Step by Step Process

1️ Heat Oil:
In a deep pan, heat 3 tbsp oil or ghee.

2️ Sauté Base:
Add sliced onions. Fry until golden brown. Then add 1 tbsp ginger garlic paste, sauté till raw smell goes.

3️ Add Tomatoes:
Add tomato puree, cook till oil separates.

4️ Spice Up:
Add 50 g Hyderabadi Masala. Mix well, cook on low flame for 2-3 min.

5️ Curd Magic:
Lower flame, slowly add whisked curd while stirring to avoid curdling. Cook for 2 min.

6️ Add Main:
Add chopped veggies / paneer / chicken. Mix well.

7️ Simmer:
Add ½ cup water (adjust as needed). Cover & cook on low flame till done (10-15 min).

8️ Finish:
Garnish with fresh coriander & mint leaves.


🍽️ Serving Suggestion

  • Serve hot with Hyderabadi Dum Biryani, jeera rice or naan.
  • Squeeze fresh lemon for extra zing.

💡 For authentic Hyderabadi touch, add a pinch of saffron soaked in warm milk at the end.
💡 Always keep flame low after adding curd to avoid splitting.
