Kolhapuri Sabji using Kolhapuri Masala - Serves 4

A bold and fiery mixed vegetable curry inspired by the flavors of Maharashtra, Kolhapuri Sabji is cooked with a robust Kolhapuri masala, creating a rich, spicy gravy. This dish is perfect for those who love a bit of heat in their meals and pairs wonderfully with bhakri, chapati, or steamed rice.

Ingredients
Mixed vegetables (carrot, beans, potato, capsicum): 2 cups, chopped
Onions (finely chopped): 2 medium
Tomatoes (finely chopped): 2 medium
Ginger-garlic paste: 1 tbsp
Kolhapuri masala: 2 tbsp
Red chilli powder: 1 tsp (optional for extra spice)
Turmeric powder: ½ tsp
Salt: To taste
Oil: 2½ tbsp
Water: As needed
Fresh coriander: For garnish

Step-by-Step Method
1. Parboil the mixed vegetables in salted water until just tender. Drain and keep aside.
2. Heat oil in a pan. Sauté chopped onions until golden brown. Add ginger-garlic paste and cook for 1 minute.
3. Add tomatoes and cook until soft. Mix in turmeric, Kolhapuri masala, red chilli powder (if using), and salt.
4. Cook the masala until oil separates. Add the parboiled vegetables and stir well.
5. Add a splash of water for gravy. Cover and simmer on low flame for 8–10 minutes until flavors combine.
6. Garnish with fresh coriander and serve hot.
